Already named as the world’s best female chef of 2017 ahead of the World’s 50 Best Restaurants awards this April, Ana Roš is often credited with single-handedly putting Slovenian food on the map. Her restaurant Hiša Franko in Kobarid, amid the alpine beauty of the Soča Valley near Slovenia’s Italian border, operates a “zero-kilometre” approach, using only seasonal ingredients available within walking distance of the village. Roš’s alchemical feats with fermented cheese, berries and freshwater fish have also been profiled in an episode of Netflix’s Chef’s Table.
