Tekuna Gachechiladze

Often dubbed the “queen of Georgian fusion”, Tekuna Gachechiladze trained in New York before returning to Tbilisi to run a string of successful restaurants. At Cafe Littera, a summer restaurant that occupies the beautiful courtyard of the art deco Georgian Writers’ House in downtown Tbilisi, Gachechiladze puts a new spin on the classics, serving pkhali as dips or kharcho soup, which traditionally contains beef, with shrimp. While not on TV, Gachechiladze is often to be found at her house in Artana village, Kakheti, rediscovering forgotten ingredients or introducing new ones from abroad to Georgia’s fertile soil.
