Tőnis Sigur is at the forefront of the movement, serving up bold reinterpretations of local produce from his waterside restaurant Noa, just across the bay from Tallinn’s Old Town. If you’ve still got room after moose and lingonberry pie made with khachapuri dough, the dessert of sea buckthorn mixed with amaretto and infused with nitrous oxide comes highly recommended.
